Dijon, Château de Gilly****

The Château de Gilly is in the heart of the famous vineyard Clos Vougeot, close to Dijon and Beaune. Former residence of the abbots of Cîteaux and Theatre, the Castle was bought by the Group 'Grandes Etapes Françaises "to transform it into a hotel. A great achievement for a relatively austere building, they managed to make it a pleasant place where you will feel like a guest of the chatelain. The rooms and suites are elegantly decorated in respect of the building while enjoying the modern comfort. Period furniture, large fireplaces in some rooms, exposed beams, floral fabrics on the walls and thick carpets ... The rooms have a lovely view of the French garden with several ornemental ponds or the old village bordered by the river.
Le Clos Prieur restaurant is located in a beautiful vaulted room with ribbed vaults supported by slender pillars which were originally the cellar of the Cistercian monks of the Château de Gilly. You can taste the menu of Chef Franck Paget he cooks with "a generous spirit and an open heart."
For the record, Clos Vougeot had no cellars and was aging their wines in the cellars of Château de Gilly ...
